Happy St. Patricks Day!
St. Patrick’s day was celebrated in style this past weekend at St. John’s Soup Kitchen. Corn beef and potatoes were on the menu. The only problem was that corn beef takes three hours to cook. The first thing we did when we got to the kitchen was to begin making the corn beef. With all the volunteers helping out, we managed to get 140 pounds of corn beef boiling by 7:30am. By 11 o’clock the corn beef had to be cooled, slice and plated. It was going to be close!
At 10:30 we checked the beef and it seemed ready. With all hands on deck we trimmed the fat, sliced it and then plated it. Luckily the potatoes didn’t demand nearly as much attention, and because of that they were ready right on time too. It was one of the most exciting and fast paced days I’ve ever seen at St. John’s. Everyone was on the same page, and everything went smoothly. Everyone was extremely proud of the meal we served, and we’re glad we were able to something special for St. Patrick’s Day.
I’d also like to thank everyone who helped decorate the men’s dining hall. It really makes a difference to have a more “home-like” atmosphere for the guys. I can’t say enough about all of those who volunteer and contribute so much to the continued smooth operation of the kitchen.
Thanks again and we’re looking forward to next year. We’ll be practicing our corn beef recipe!
